1.5 cups of Pride of India’s white rice flour
2 teaspoon baking soda
2 teaspoons Pride of India’s ground cinnamon
½ teaspoon ground nutmeg
¾ cup unsweetened applesauce
¾ cup vegetable oil
4 eggs
1 teaspoon vanilla extract
3 cups of peeled and grated carrots
½ cup chopped walnuts (or pecans)
½ cup raisins
A Pinch of Himalayan pink salt
1/2 cup vegetable oil
1.5 cup cream cheese
¼ cup unsalted butter
1 cup powdered sugar
1/2 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans with one of the rice flours.
In a large bowl, whisk together gluten-free flours, baking soda, cinnamon, nutmeg, ground ginger, and Himalayan pink salt.
In a separate large bowl, whisk together the unsweetened applesauce, coconut sugar, vegetable oil. Beat in the eggs one at a time, then stir in little vanilla extract.
Gradually combine wet and dry ingredients.
Stir in Carrots and chopped nuts and raisins.
Pour the batter into the pans and spread evenly. Bake for about 35 minutes until a toothpick inserted into the center comes out clean.
Let the cake cool fully in the pan before inverting or taking it out onto a wire rack
