8 cups Vegetable stock
1 tbsp Vegetable oil
1 small Onion
1 large tomato Chopped
1 large carrot Chopped
1 tsp Paprika
3 cups spinach
Himalayan Pink Rock SaltandOrganic Black Pepper Ground to taste
half lemon wedge
fresh coriander leaves
Take a medium pan and cook the onions. Sauté for 2-3 mins.
Stir in chopped tomatoes and carrots.
Add all the spices.
Add the washed lentils and the vegetable stock.
Cook it covered for 20 mins.
Add the spinach.
Simmer for 5 mins.
Stir in fresh lemon juice.
Garnish with fresh coriander leaves.
